Ingredients:
- 400g spaghetti
- 150g pancetta, diced
- 2 large eggs
- 100g grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet, cook the pancetta over medium heat until crispy. Add the minced garlic and sauté for an additional minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese until well combined.
4. Add the hot spaghetti to the skillet with pancetta, and remove from heat. Quickly pour the egg and cheese mixture over the spaghetti, tossing rapidly to create a creamy sauce. If the sauce is too thick, add a bit of reserved pasta water to achieve desired consistency.
5. Season with salt and black pepper to taste.
6. Serve immediately, garnished with fresh parsley if desired.
