Ingredients:
- 400g spaghetti
- 150g pancetta, diced
- 2 large eggs
- 100g grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water until al dente, according to package instructions. Reserve 1 cup of pasta water and then drain the pasta.
2. In a large skillet, cook the pancetta over medium heat until crispy, about 5-7 minutes. Add the minced garlic and sauté for an additional minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and pepper.
4. Add the drained spaghetti to the skillet with the pancetta and garlic, tossing to combine.
5. Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta, stirring vigorously to create a creamy sauce. If needed, add reserved pasta water a little at a time to reach desired creaminess.
6. Serve immediately, garnished with fresh parsley and extra Parmesan cheese if desired.
