Ingredients:
- 400g spaghetti
- 150g pancetta or guanciale, diced
- 2 large eggs
- 100g grated Pecorino Romano cheese
- 50g grated Parmesan cheese
- Freshly ground black pepper
- Salt (for pasta water)
- Fresh parsley (optional, for garnish)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet over medium heat, cook the pancetta until it's crispy, about 5-7 minutes. Remove from heat and let it cool slightly.
3. In a bowl, whisk together the eggs, Pecorino Romano, Parmesan, and a generous amount of black pepper until well combined.
4. Add the hot spaghetti to the skillet with pancetta. Quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach desired consistency.
5. Serve immediately, garnished with additional cheese and fresh parsley if desired.
