recipe

A creamy and delicious Italian pasta dish made with eggs, cheese, pancetta, and pepper.
Preparation Time: 20 minutes
Serving Size: 4
Ingredients:
- 400g spaghetti
- 150g pancetta or guanciale, diced
- 3 large eggs
- 100g grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the spaghetti according to package instructions in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain the pasta.
2. In a large skillet over medium heat, cook the pancetta until crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper.
4. Combine the hot pasta with the pancetta and garlic in the skillet. Remove from heat.
5. Quickly pour the egg and cheese mixture over the pasta, tossing to combine. If the sauce is too thick, add reserved pasta water a little at a time until you reach desired creaminess.
6. Serve immediately, garnished with chopped parsley and extra Parmesan cheese, if desired.
