Ingredients:

- 400g spaghetti
- 150g pancetta or guanciale, diced
- 3 large eggs
- 100g grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)

Instructions:

1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a skillet over medium heat, add the diced pancetta or guanciale. Cook until crispy, about 5-7 minutes. Add the minced garlic and sauté for an additional minute.
3. In a bowl, beat the eggs and mix in the grated Parmesan cheese. Season with salt and black pepper.
4. Add the drained spaghetti to the skillet with the pancetta and garlic, tossing to combine. Remove from heat.
5. Quickly pour the egg and cheese mixture over the spaghetti, tossing continuously to create a creamy sauce. If needed, add reserved pasta water a little at a time to reach desired consistency.
6. Serve immediately, garnished with chopped parsley and extra Parmesan if desired.
