Ingredients:
- 400g spaghetti
- 150g pancetta, diced
- 2 large eggs
- 100g Parmesan cheese, grated
- 2 cloves garlic, minced
- Salt and freshly ground black pepper
- Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water and then drain the spaghetti.
2. In a large skillet over medium heat, add the diced pancetta and cook until crispy, about 5-7 minutes. Add the minced garlic and sauté for another minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper.
4. Remove the skillet from heat and add the drained spaghetti to the pan with the pancetta. Toss to combine.
5. Quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. Add reserved pasta water a little at a time until the desired consistency is reached.
6. Serve immediately, garnished with chopped parsley and extra Parmesan cheese if desired.
