Ingredients:

- 400g spaghetti
- 150g pancetta or guanciale, diced
- 3 large eggs
- 100g grated Parmesan cheese
- 2 cloves garlic, minced
- Salt, to taste
- Freshly ground black pepper
- Fresh parsley, chopped (for garnish, optional)

Instructions:

1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a pan over medium heat, cook the diced pancetta or guanciale until crispy, about 5-7 minutes. Add the minced garlic and sauté for an additional minute. Remove from heat.
3. In a bowl, whisk together the eggs and grated Parmesan cheese until smooth.
4. Quickly add the hot spaghetti to the pancetta mixture in the pan, tossing to combine.
5. Remove the pan from the heat and pour the egg and cheese mixture over the spaghetti, stirring quickly to create a creamy sauce. If the sauce is too thick, add some reserved pasta water until you reach the desired consistency.
6. Season with salt and freshly ground black pepper to taste.
7. Serve immediately, garnished with chopped parsley if desired.
