Ingredients:
- 400g spaghetti
- 150g pancetta, diced
- 2 large eggs
- 100g grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and freshly ground black pepper
- Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
2. In a large skillet over medium heat, cook the pancetta until crispy, about 5-7 minutes. Add the minced garlic and sauté for an additional minute.
3. In a bowl, whisk together the eggs, grated Parmesan, salt, and pepper.
4. Once the pasta is cooked and drained, add it to the skillet with the pancetta. Remove from heat.
5. Quickly pour the egg and cheese mixture over the spaghetti, tossing vigorously to create a creamy sauce. If needed, add reserved pasta water a little at a time until desired consistency is reached.
6. Serve immediately, garnished with chopped parsley and additional Parmesan cheese if desired.
