- 300 g pasta (such as spaghetti or penne)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g fresh basil leaves
- 100 g grated Parmesan cheese
- Salt and pepper to taste
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain and reserve a little pasta water.
2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for about one minute.
3. Add the diced bell pepper and zucchini to the skillet. Cook for about 5-7 minutes, until the vegetables are tender.
4. Stir in the cherry tomatoes and cook for a few more minutes until they start to soften.
5. Combine the cooked pasta with the vegetable mixture. Add a little reserved pasta water if needed for a creamier texture.
6. Mix in the fresh basil leaves, salt, and pepper.
7. Serve the pasta in bowls and sprinkle with grated Parmesan cheese.
