Ingredients:
- 300 g pasta (e.g., spaghetti) - 150 g bacon or pancetta
- 2 eggs
- 100 ml cream
- 50 g grated Parmesan cheese
- Salt to taste
- Black pepper to taste
- Fresh parsley (optional, for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain the pasta and reserve a little cooking water. 2. In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and drain excess fat.
3. In a bowl, whisk together the eggs, cream, Parmesan cheese, salt, and black pepper.
4. Add the cooked pasta to the skillet with the bacon and mix well.
5. Pour the egg mixture over the pasta and stir quickly to cook the eggs gently with the heat of the pasta, avoiding scrambling.
6. If the sauce is too thick, add a little reserved cooking water as needed.
7. Serve immediately, garnished with fresh parsley if desired.
