This delicious weekend meal combines juicy cider chicken, rich goat cheese cream, and homemade Hungarian gnocchi. A perfect choice for your weekend dining table!

Ingredients

Cider Chicken Stuffed with Chorizo:
- 1 pack of chicken thighs
- About 200 g chorizo, sliced
- About 6-8 garlic cloves, sliced
- 1/2 lemon, sliced
- Marinade:
- 2 dl dry apple cider
- 1 tbsp sweet paprika powder
- Juice of 1/2 lemon
- Salt and black pepper
Hungarian Gnocchi:
- 5 potatoes
- 2.3 dl all-purpose flour
- 1 egg
- 1 tbsp oil
- A pinch of salt
For Finishing:
- Oil
- 2 dl breadcrumbs
Goat Cheese Cream:
- 200 g plain goat cheese
- 1.5 dl Turkish yogurt
- Salt

Instructions

1. Marinate the Chicken:
- Mix the marinade ingredients in a bowl.
- Place the chicken thighs in a baking dish and rub the marinade over the chicken.
- Tuck slices of chorizo and some of the sliced garlic under the skin of the chicken.
- Place lemon slices on top of the chicken.
- Allow to marinate for at least one hour.
2. Bake the Chicken:
- Bake the marinated chicken in a preheated oven at 200°C (392°F) for about 40 minutes, or until the chicken is tender and the skin is crispy.
3. Prepare the Gnocchi:
- Boil the potatoes with their skins on, then peel them while hot. Mash the potatoes.
- Add flour, egg, oil, and salt to the mashed potatoes. Knead until you have a firm dough.
- Shape the dough into a log, divide into five pieces, and roll each piece into a stick.
- Cut the sticks into about 2 cm pieces and roll them into small oval shapes.
- Boil water in a pot and cook the gnocchi until they float to the surface. Drain.
4. Finish the Gnocchi:
- Heat oil in a separate pan and toast the breadcrumbs until golden brown.
- Add the cooked gnocchi and toss them in the pan for 2-3 minutes.
5. Make the Goat Cheese Cream:
- Mix goat cheese, Turkish yogurt, and salt. Allow it to chill in the refrigerator.
6. Serve:
- Serve the chorizo-stuffed cider chicken with goat cheese cream and gnocchi.
