Ingredients:
- 200 g pasta (e.g. spaghetti)
- 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Cut the bacon into small pieces and fry in a pan until golden brown.
3. Add the minced garlic to the bacon and sauté for an additional minute.
4. In a bowl, whisk the eggs and mix in the grated Parmesan cheese. Season with salt and black pepper.
5. Once the pasta is cooked, drain it, reserving a little cooking water.
6. Combine the hot pasta with the bacon and garlic in the pan.
7. Remove the pan from heat and pour the egg mixture over the pasta. Stir quickly to cook the eggs slightly without scrambling. If needed, add a bit of reserved cooking water to achieve a creamy consistency.
8. Serve immediately, garnished with fresh parsley and additional Parmesan if desired.
