A delicious cheesecake roll that combines the softness of a sponge cake with the richness of cheesecake. Perfect for celebrations or everyday treats! Preparation Time: 1 hour

Ingredients
Base:- 4 eggs
- 200 g sugar
- 200 g all-purpose flour
- 1 tsp baking powder
Filling:
- 200 ml cream
- 200 g cream cheese
- 1 tbsp vanilla pudding powder
- 4 tbsp mixed berry jam
- 100 g blueberries
- 2-3 tbsp raspberry jam
Additional Filling:
- 200 ml cream
- 200 g cream cheese
- 60 g sugar
- 2 egg yolks
- 50 ml water
- 1 gelatin leaf
Topping:
- 50 g jelly sugar
- 100 ml water
- blueberries
Instructions
1. Prepare the Base:- Whisk the eggs and sugar until thick and fluffy.
- Sift in the flour and baking powder, and gently fold until combined.
- Spread the batter onto a parchment-lined baking tray.
- Bake at 220°C (428°F) for about 15 minutes. Invert onto another sheet of parchment and carefully remove the top paper. Let cool.
2. Make the Filling:
- Whip the cream until soft peaks form and add the vanilla pudding powder.
- Mix the cream cheese with the mixed berry jam and fold in the whipped cream and blueberries.
- Spread raspberry jam on the sponge and then top with the cheesecake mixture. Roll it up and place in a loaf pan or suitable container lined with plastic wrap.
3. Prepare Additional Filling:
- Whip 150 ml of cream until fluffy.
- Soak the gelatin leaf in cold water.
- Whisk the remaining cream cheese with 50 ml of cream.
- Boil water and sugar until it reaches 121°C (250°F). Whisk the egg yolks and add the hot sugar water. Add the soaked gelatin.
- Combine this mixture with the cream cheese mixture and gently fold in the whipped cream.
- Spread this filling over the rolled sponge and chill in the refrigerator to set.
4. Topping:
- Arrange the blueberries on top of the cake.
- Boil water and add the jelly sugar. Spoon the mixture over the blueberries.
Allow the cheesecake roll to set in the refrigerator before serving.
