Serving Size: 4 servings
Ingredients:
- 4 medium-sized carrots- 1 cup green or black olives
- Salt to taste
- Black pepper to taste
- 1 tablespoon olive oil (optional)
Instructions:
1. Scrub the carrots clean and chop them into small pieces.2. Cook the carrot pieces in a small amount of water in a pot until they are nearly tender.
3. Drain the cooked carrots and transfer them to a food processor.
4. Add the drained olives to the carrots.
5. Season with salt and black pepper. If desired, add the olive oil.
6. Blend the ingredients until smooth in the food processor.
7. Serve immediately or cool and store in the refrigerator.
