Ingredients:
- 400 g spaghetti - 150 g bacon or pancetta
- 3 egg yolks
- 1 whole egg
- 100 g grated Parmesan cheese
- 2 garlic cloves, minced
- Salt
- Black pepper
- Fresh parsley (optional)
Instructions:
1. Cook the spaghetti in salted water according to the package instructions until al dente. 2. Meanwhile, heat a skillet over medium heat and cook the bacon or pancetta until crispy. Add the minced garlic and sauté for an additional minute.
3. Once the pasta is ready, reserve a bit of the cooking water and drain the pasta.
4. Add the hot pasta to the skillet with the bacon and garlic. Stir well to combine.
5. Remove the skillet from heat and mix in the egg yolks and whole egg. Add the Parmesan cheese and stir quickly to prevent the eggs from scrambling.
6. If needed, add a little reserved pasta water until the mixture is creamy.
7. Season with black pepper and salt to taste. Serve garnished with fresh parsley if desired.
