A delicious mushroom and vegetable burger that’s perfect for a hearty meal. Preparation Time: 30 minutes
Serving Size: 4 burgers
Ingredients:
- 1 large potato
- 1 large carrot
- 1 onion
- About 2 dl wild mushrooms (e.g., aspen mushrooms)
- 2 eggs
- Breadcrumbs
- Salt
- Black pepper
- Butter or margarine for frying
Instructions:
1. Grate the carrot, potato, and onion.
2. Mix the grated vegetables in a bowl.
3. Finely chop the mushrooms and add them to the grated mixture.
4. Season the mixture with salt and black pepper to taste.
5. Crack in the two eggs and mix thoroughly.
6. Add breadcrumbs until the mixture is firm enough to hold its shape.
7. Shape the mixture into patties.
8. Heat butter or margarine in a pan and fry the patties on both sides until golden brown.
9. Serve the patties in a burger bun or on their own.
