A delicious pasta puttanesca recipe combining the juiciness of chicken with bold flavors. This dish is quick and easy to prepare, perfect for a weeknight dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g. spaghetti or penne) - 400 g chicken breast
- 2 tbsp olive oil
- 2 garlic cloves
- 1 can (400 g) crushed tomatoes
- 100 g black olives (sliced)
- 2 tbsp capers
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a little cooking water.2. Cut the chicken breast into small cubes. Heat olive oil in a skillet over medium heat and add the chicken cubes. Cook until golden brown and cooked through, about 5-7 minutes.
3. Add minced garlic to the skillet and cook for another minute until the garlic is soft.
4. Pour in the crushed tomatoes, sliced olives, capers, and chili powder. Season with salt and pepper. Let it simmer on low heat for about 10 minutes.
5. Toss the cooked pasta into the sauce. Add a little cooking water if needed to keep the mixture from drying out.
6. Serve the portions garnished with fresh basil.
