Serving Size: 2 servings
Ingredients:
- 200 g pasta
- 1 garlic clove
- 1 tablespoon olive oil
- 400 g canned tomatoes
- 2-4 anchovy fillets (optional)
- About 100 ml Kalamata olives
- Crushed dried chili (to taste)
- 1 tablespoon capers
- Salt
- Black pepper
- (1 teaspoon honey or sugar - to taste)
- Fresh parsley (for garnish)
- Grated Parmesan cheese (for garnish)
- Olive oil (for finishing)
Instructions:
1. Heat olive oil in a pan and sauté sliced or minced garlic briefly.
2. Add canned tomatoes, chopped anchovy fillets, Kalamata olives, and capers to the pan. Crush the tomatoes to break them down.
3. Cook the pasta in salted boiling water until al dente.
4. Taste the sauce and adjust with salt, black pepper, and sweetener if needed.
5. Mix the cooked pasta into the sauce.
6. Plate the dish, sprinkle fresh parsley, add grated Parmesan cheese, and drizzle with olive oil before serving.
