Ingredients:
- 200 g quinoa
- 400 ml vegetable broth
- 1 cucumber, diced
- 1 red bell pepper, diced
- 150 g cherry tomatoes, halved
- 100 g feta cheese, crumbled
- 50 g fresh mint, chopped
- 50 g fresh basil, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions:
1. Rinse quinoa under cold water. Cook quinoa in vegetable broth for about 15 minutes, until the liquid is absorbed and quinoa is tender. Let it cool.
2. Prepare the vegetables: dice the cucumber and bell pepper, and halve the cherry tomatoes.
3. In a large bowl, combine the cooled quinoa, vegetables, feta cheese, and herbs.
4. For the dressing, mix olive oil, lemon juice, salt, and pepper. Pour dressing over the salad and mix well.
5. Serve immediately or let it marinate in the refrigerator before serving.
