Ingredients:
- 400 g chicken fillets - 2 tbsp olive oil
- 1 onion
- 2 garlic cloves
- 1 red bell pepper
- 1 zucchini
- 200 g cherry tomatoes
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 50 g Parmesan cheese (grated)
- Fresh basil for garnish
Instructions:
1. Heat olive oil in a large frying pan over medium heat.2. Add chopped onion and garlic to the pan. Sauté until the onion is soft.
3. Cut the chicken fillets into bite-sized pieces and add them to the pan. Cook until the chicken is done and has a nice color.
4. Add diced bell pepper and zucchini to the pan. Cook for a few more minutes.
5. Add cherry tomatoes, salt, black pepper, and oregano. Stir well and let it cook for a few minutes.
6. Remove the pan from heat and sprinkle grated Parmesan cheese on top.
7. Garnish with fresh basil before serving.
