Ingredients:
- 400 g potatoes - 200 g carrots
- 1 onion
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 100 ml vegetable broth
- 100 g cream cheese
Instructions:
1. Peel the potatoes and carrots, then dice them into cubes. 2. Finely chop the onion.
3. Heat the olive oil in a large skillet over medium heat.
4. Add the onion and sauté for a few minutes until it becomes translucent.
5. Add the diced potatoes and carrots to the skillet and mix well.
6. Season with salt, black pepper, and thyme.
7. Pour in the vegetable broth, cover, and let it cook for about 20 minutes until the vegetables are tender.
8. Stir in the cream cheese until melted and well combined.
9. Serve warm.
