Delicate and flavorful matcha-infused pastries that are perfect for satisfying your sweet tooth. These treats are wonderfully creamy with a hint of lemon. Preparation time is about 3 hours, including chilling time. This recipe yields approximately 20-25 pastries. Ingredients:
Base:
- 150 g cold butter
- 100 g powdered sugar
- 1 tsp vanilla sugar
- 2 tbsp cornstarch
- 300 g all-purpose flour
- 1½ tsp matcha green tea powder
- 1 egg
Filling:
- 150 ml cream
- 1½ tbsp cornstarch
- 50 g sugar
- 2 egg yolks
- 100 g cold butter
- Grated zest of 1 lemon
Topping:
- 250 g powdered sugar
- 2 tbsp lemon juice
- ½ tsp matcha green tea powder
Instructions:
1. Prepare the base: In a bowl, mix the cold diced butter, powdered sugar, vanilla sugar, cornstarch, all-purpose flour, and matcha powder until crumbly. Add the egg and mix quickly until smooth. Add more flour if necessary.
2. Wrap the dough in plastic wrap and chill in the refrigerator for 1-2 hours.
3. Grease the pastry molds. Press the chilled dough into the bottoms and sides of the molds with floured hands. Bake at 200°C (392°F) for about 10 minutes. Allow to cool and carefully remove the bases from the molds.
4. Prepare the filling: In a saucepan, combine the cream, cornstarch, sugar, and egg yolks. Heat gently while stirring continuously until the mixture thickens like custard (do not let it boil). Remove from heat, add the cubed butter and grated lemon zest. Transfer to a container to cool.
5. Prepare the topping: Mix the powdered sugar, lemon juice, and matcha powder together. If needed, adjust the consistency with more powdered sugar or lemon juice until it's a thick yet pourable glaze.
6. Assemble the pastries: Spoon the filling onto the cooled bases and pour the topping on top.
Enjoy the pastries on the same day to maintain the crispness of the bases.
