Ingredients:
- 250 g spaghetti
- 100 g bacon or pancetta
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves, finely chopped
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti in salted water according to the package instructions until al dente.
2. Meanwhile, fry the bacon or pancetta in a large pan over medium heat until crispy. Add the finely chopped garlic and sauté for one more minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese until well combined.
4. Once the spaghetti is cooked, drain it and save a little pasta water. Add the spaghetti to the pan with the bacon and garlic.
5. Remove the pan from heat and quickly add the egg mixture to the spaghetti, stirring rapidly to lightly cook the eggs and create a creamy sauce. Add reserved pasta water if the sauce is too thick.
6. Season with salt and black pepper to taste. Serve immediately with fresh parsley on top, if desired.
