A delicious and nutritious vegetable soup, perfect for a light lunch or dinner. Preparation time is about 30 minutes. Serves 4.Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 liter vegetable broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic, sauté until softened.
3. Add the carrots, potatoes, zucchini, and bell pepper. Sauté for about 5 minutes.
4. Pour in the vegetable broth and add the thyme. Bring to a boil.
5. Reduce the heat and let the soup simmer for about 20 minutes, or until the vegetables are tender.
6. Season with salt and pepper. Serve the soup garnished with fresh parsley.
