Serving Size: 4 servings
Ingredients:
- 400 g spaghetti
- 150 g bacon or pancetta
- 3 egg yolks
- 100 ml cream
- 100 g grated Parmesan cheese
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti according to package instructions in salted water until al dente.
2. Meanwhile, heat a skillet over medium heat and cook the bacon or pancetta until crispy. Remove from the pan and drain excess fat.
3. In a bowl, whisk together the egg yolks, cream, and grated Parmesan cheese. Season with salt and black pepper.
4. Once the pasta is cooked, reserve a bit of the cooking water and drain the pasta. Add the pasta to the skillet with the bacon.
5. Remove the skillet from the heat and quickly mix in the egg mixture, ensuring the eggs do not cook too much and create a creamy sauce. If the sauce is too thick, add a little reserved pasta water.
6. Serve immediately and garnish with fresh parsley if desired.
