Ingredients:
- 300 g spaghetti
- 150 g bacon or guanciale
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Meanwhile, heat a skillet over medium heat and add the bacon or guanciale. Cook until crispy.
3. Add the minced garlic to the bacon and sauté for another minute.
4. In a bowl, whisk the eggs and mix in the grated Parmesan cheese. Season with salt and black pepper.
5. Once the pasta is cooked, drain it, reserving a bit of the cooking water. Add the pasta to the bacon and garlic mixture.
6. Remove the skillet from heat and quickly stir in the egg-cheese mixture to prevent the eggs from scrambling.
7. Add a little reserved cooking water if needed to create a creamy consistency.
8. Serve immediately, garnished with fresh parsley.
