Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 200 g fresh spinach
- 200 ml cream
- 100 g grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- (Optional) 1/2 tsp nutmeg
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain the pasta and reserve a little cooking water.
2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for a few minutes until soft but not browned.
3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
4. Pour the cream into the spinach mixture and stir well. Let the sauce simmer on low heat for about 5 minutes.
5. Stir in the grated Parmesan cheese until melted into the sauce. Season with salt, pepper, and nutmeg if desired.
6. Combine the cooked pasta with the sauce. Mix well and add a little reserved cooking water if the sauce is too thick.
7. Serve immediately, garnished with extra Parmesan cheese if desired.
