Ingredients:
- 2 tablespoons olive oil - 1 onion, chopped
- 2 garlic cloves, crushed
- 2 carrots, diced
- 2 potatoes, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 liter vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Fresh herbs for garnish (e.g., parsley)
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and crushed garlic, sauté for about 3 minutes until the onion is soft. 2. Add the carrots, potatoes, zucchini, and bell pepper to the pot. Sauté the vegetables for about 5 minutes, stirring occasionally.
3. Pour the vegetable broth into the pot and add salt, black pepper, thyme, and basil. Bring the soup to a boil.
4. Reduce the heat and let the soup simmer for 15-20 minutes until all the vegetables are tender.
5. Check the flavor and adjust the seasoning if necessary. Serve hot, garnished with fresh herbs.
