Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or penne)- 150 g fresh spinach
- 100 g fresh parsley
- 50 g pine nuts
- 2 garlic cloves
- 100 ml olive oil
- 50 g Parmesan cheese (grated)
- Salt to taste
- Black pepper to taste
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente.2. Meanwhile, heat a skillet over medium heat and toast the pine nuts for a few minutes until golden brown. Remove from the pan and set aside.
3. In the same skillet, add the olive oil and crushed garlic cloves. Sauté the garlic until golden brown.
4. Add the spinach and parsley to the skillet. Cook until the vegetables are softened.
5. Stir in the toasted pine nuts and grated Parmesan cheese. Mix well.
6. Drain the pasta and combine it with the spinach mixture. Season with salt and black pepper to taste.
7. Serve immediately and enjoy!
