Orange-Lemon Curd with Mascarpone-Meringue Cream

A delightful dessert that combines refreshing orange-lemon curd with soft mascarpone-meringue cream. Perfect for celebrations or special occasions! Preparation Time: 30 minutes + 1 hour cooling time
Serving Size: 4-6 servings
Ingredients:
- 2 dl orange juice - 1 dl lemon juice
- 1 tbsp grated lemon zest
- 1 dl sugar
- 2 tbsp cornstarch
- 1 egg
- 250 g mascarpone cheese
- 2 dl heavy cream
- 2-3 ready-made meringues
Instructions:
1. In a saucepan, whisk together the orange juice, lemon juice, lemon zest, sugar, cornstarch, and egg. Heat the mixture slowly over medium heat, stirring constantly with a whisk. Once the curd bubbles once or twice, remove the saucepan from heat. 2. Pour the curd into a bowl and sprinkle sugar on the surface to prevent a skin from forming. Place it in the refrigerator to cool for about an hour.
3. Whip the mascarpone and heavy cream together until smooth. Sweeten to taste with sugar and crumble in the meringues.
4. Divide the cooled orange-lemon curd into dessert cups and spoon the mascarpone-meringue cream on top.
