Serving Size: 4 servings
Ingredients:
- 1 onion - 1 tsp salt
- 2 tsp garam masala
- 400 ml orange juice
- Water
- 200 g red lentils
- 2 tbsp plain or orange-flavored light cream cheese (6-11% fat)
- 1 tbsp canola oil
- 1 tsp turmeric
- 2 tbsp vegetable broth
Instructions:
1. Sauté the chopped onion in canola oil over medium heat until soft and translucent. 2. Add the garam masala and turmeric to the onion and cook briefly to release the spices' flavors.
3. Pour the orange juice into the onion mixture and add water as needed to reach your desired consistency.
4. Stir in the red lentils and vegetable broth. Let the soup simmer on low heat for about 15-20 minutes until the lentils are tender.
5. Finally, mix in the cream cheese and allow it to warm through before serving.
