Serving Size: 10 servings
Ingredients:
- 5 eggs
- 1.5 dl sugar
- 1 dl all-purpose flour
- 1 dl potato flour
- 1 tsp baking powder
- Rhubarb-strawberry jam
- Strawberries
- Quark mousse
- Whipped cream
- Sugar paste
- Chocolate raisins
- Digestive biscuits
Instructions:
1. Prepare the cake base: Whisk the eggs and sugar until fluffy. In a separate bowl, combine the all-purpose flour, potato flour, and baking powder. Gently fold the flour mixture into the egg mixture.
2. Pour the batter into a greased and floured cake pan. Bake at 175°C (350°F) for about 25-30 minutes. Allow to cool.
3. Once cooled, cut the cake into three layers. Moisten the tops of the cake layers as desired.
4. Spread rhubarb-strawberry jam and place sliced strawberries between the cake layers.
5. Prepare the quark mousse and pour it over the top layer of the cake. Allow it to set in the refrigerator.
6. Cover the cake with whipped cream and decorate with sugar paste, chocolate raisins, and crushed digestive biscuits.
7. Serve and enjoy!
