Ingredients:
- 200 g pasta (e.g., spaghetti)
- 100 g bacon or pancetta
- 2 egg yolks
- 50 g Parmesan cheese (grated)
- 1 garlic clove (minced)
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted boiling water according to package instructions until al dente.
2. Chop the bacon or pancetta into small pieces and fry them in a pan over medium heat until crispy.
3. Add the minced garlic to the pan and cook for an additional minute.
4. In a bowl, whisk together the egg yolks and grated Parmesan cheese. Season with salt and black pepper.
5. Once the pasta is cooked, drain it, reserving a little pasta water.
6. Add the hot pasta to the pan with the bacon and garlic, mixing well.
7. Remove the pan from the heat and quickly stir in the egg yolk mixture, ensuring the yolks cook gently to create a creamy sauce.
8. If necessary, add reserved pasta water to achieve the desired consistency.
9. Serve immediately, garnished with fresh parsley and extra Parmesan cheese if desired.
