Ingredients:
- 200 g pasta (e.g., spaghetti)
- 100 g bacon or pancetta
- 2 eggs
- 50 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions.
2. Heat a frying pan and add the bacon or pancetta. Cook until crispy.
3. Add crushed garlic to the pan and sauté for an additional minute.
4. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper to taste.
5. Once the pasta is cooked, drain it and reserve a little cooking water.
6. Combine the pasta with the bacon in the pan and mix well.
7. Remove the pan from heat and quickly add the egg mixture, stirring to lightly cook the eggs with the residual heat of the pasta.
8. If the mixture is too thick, add a bit of the reserved cooking water.
9. Serve immediately, garnished with fresh parsley if desired.
