Ingredients:
- 250 g noodles
- 200 g sweet potato
- 1 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp sriracha sauce (or other hot sauce)
- 1 clove garlic, crushed
- 1 tbsp sesame seeds
- Fresh herbs (e.g., cilantro or basil) for garnish
Instructions:
1. Cook the noodles according to package instructions. Drain and set aside.
2. Peel and dice the sweet potato. Boil the sweet potato cubes until soft, about 10-15 minutes.
3. Drain the sweet potato and mash it until smooth.
4. Heat the olive oil in a pan over medium heat and add the crushed garlic. Sauté for a few minutes until the garlic is golden brown.
5. Add the mashed sweet potato to the pan, mix well, then add the soy sauce, honey, and sriracha sauce. Stir until all ingredients are well combined.
6. Add the cooked noodles to the pan and gently toss until the noodles are coated in the sauce.
7. Serve the portions on plates, sprinkling sesame seeds and fresh herbs on top.
