Serving size: Serves 6
Ingredients:
- 500 g potatoes
- 250 g carrots
- 300 g cauliflower
- 200 g broccoli
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 100 g grated cheese (e.g., cheddar)
- 1 dl cream
- 1 tsp garlic powder
- 1 tbsp fresh parsley
Instructions:
1. Peel and chop the potatoes and carrots. Boil them in salted water for about 15 minutes until soft.
2. Add the cauliflower and broccoli to the boiling water and cook for an additional 5-7 minutes.
3. Drain the vegetables and transfer them to a large bowl.
4. Add the olive oil, black pepper, garlic powder, and mix well.
5. Pour the cream over the vegetables and stir to combine.
6. Transfer the mixture to a baking dish and sprinkle the grated cheese on top.
7. Bake in a preheated oven at 180°C (356°F) for about 20 minutes until the cheese is melted and slightly golden.
8. Garnish with fresh parsley before serving.
