Chanterelle Risotto with Veal Wallenberg

A delicious combination of creamy risotto and flavorful veal patties.

Ingredients:
For the Chanterelle Risotto:- 500 ml chanterelles
- 1 large onion, diced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 200 g risotto rice
- 100 ml white wine
- 800 ml chicken broth
- Salt and black pepper to taste
- 2 tablespoons butter (for finishing)
For the Veal Wallenberg:
- 500 g ground veal (twice ground)
- 200 ml heavy cream
- 3 egg yolks
- 1.5 teaspoons umami seasoning
- A pinch of nutmeg
- 1.5 teaspoons salt
- Black pepper to taste
- Panko breadcrumbs
- Fresh sage leaves
- Butter for frying (generous amount)
Instructions:
1. Chanterelle Risotto:- Sauté the chanterelles to evaporate excess moisture. Reserve a few whole ones for garnish and chop the rest.
- In a saucepan, sauté the diced onion in butter and olive oil until softened.
- Add the risotto rice and sauté briefly until glossy.
- Pour in the white wine, stir, and let it absorb.
- Add the chopped chanterelles and half of the chicken broth. Stir and let absorb.
- Gradually add more broth as needed and cook the risotto for about 20 minutes, until the rice is nearly tender.
- Finish the risotto with butter and serve on plates.
2. Veal Wallenberg:
- Ensure all ingredients are cold. Place the ground veal in a metal bowl in the fridge.
- Combine egg yolks and cream with the ground veal and add the seasonings. Mix the dough thoroughly by hand.
- Shape the cold mixture into small patties (about 8 pieces) and coat them in panko breadcrumbs.
- Fry the patties in plenty of butter seasoned with sage over low heat until golden brown. Fry some sage leaves for garnish.
3. Serving:
- Spoon the chanterelle risotto onto plates, top with Wallenberg patties, cooked pancetta, whole chanterelles, and fried sage leaves.
- Finish the dish with lightly blanched peas and pea shoots.
