Ingredients:
- 300 g spaghetti
- 150 g bacon or pancetta
- 3 eggs
- 100 g Parmesan cheese, grated
- 2 garlic cloves, minced
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. While the pasta is cooking, fry the bacon or pancetta in a pan over medium heat until crispy. Add the minced garlic and cook for an additional minute.
3. In a bowl, crack the eggs and mix in the grated Parmesan cheese. Season with salt and black pepper to taste.
4. Once the pasta is cooked, drain it and reserve a bit of the cooking water. Add the pasta to the pan with the bacon and garlic.
5. Remove the pan from the heat and pour the egg mixture over the pasta. Stir quickly to ensure the eggs cook gently with the residual heat. If needed, add a bit of the reserved cooking water to achieve a creamy consistency.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
