Aioli Potato Salad

A creamy potato salad seasoned with gentle garlic aioli, perfect as a side dish for barbecues or potlucks. Preparation Time: 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 800 g potatoes - 2 dl mayonnaise
- 2 tablespoons garlic, crushed
- 1 tablespoon lemon juice
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 1 dl red onion, finely chopped
Instructions:
1. Peel and boil the potatoes in salted water until tender. Drain and let cool. 2. Cut the cooled potatoes into cubes and transfer to a bowl.
3. In a separate bowl, mix together the mayonnaise, crushed garlic, lemon juice, salt, and black pepper.
4. Pour the aioli mixture over the potatoes and gently stir to combine.
5. Add the chopped parsley and red onion. Mix well.
6. Allow the salad to chill in the refrigerator for about 15-30 minutes before serving.
