A delightful dish that showcases the best of old potatoes while waiting for the new crop. Preparation time: 1 hour
Serving size: 4 servings
Ingredients:
- 1 kg old potatoes - 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 200 g bacon, diced
- 1 dl cream
- 100 g grated cheese (e.g., cheddar or emmental)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the old potatoes. Boil them in salted water for about 15 minutes until slightly tender. Drain the water. 2. Heat the olive oil in a large skillet. Add the chopped onion and crushed garlic, sautéing for a few minutes.
3. Add the bacon to the skillet and cook until golden brown and crispy.
4. Add the boiled potatoes to the skillet and fry, stirring until they take on a beautiful color and are fully cooked.
5. Pour the cream over the potatoes and mix well. Allow to simmer for a moment until the cream thickens slightly.
6. Add the grated cheese and stir until melted.
7. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
