Ingredients:
- 2 carrots
- 1 sweet potato
- 1 red bell pepper
- 1 onion
- 2 garlic cloves
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh rosemary (or 1/2 teaspoon dried)
- 1 teaspoon honey (optional)
Instructions:
1. Peel and dice the carrots, sweet potato, and red bell pepper into small cubes.
2. Finely chop the onion and garlic cloves.
3. Heat the olive oil in a large skillet over medium heat.
4. Add the onion and garlic to the skillet, cooking until they are soft and translucent.
5. Add the carrots, sweet potato, and bell pepper to the skillet, stirring well.
6. Season with salt, black pepper, and rosemary.
7. Cook the vegetables for about 15-20 minutes, until they are tender. Add honey if using.
8. Serve warm as a side dish.
