A traditional Portuguese pastry with a crispy crust and velvety cream filling, perfect for enjoying with coffee.
Preparation Time: 1 hour (plus refrigeration)
Serving Size: 12 pastries
Ingredients:
- 250 g butter
- 500 g puff pastry
- 200 ml cream
- 200 ml milk
- 150 g sugar
- 3 egg yolks
- 60 ml cornstarch
- 1 tsp vanilla sugar
- 1/2 tsp cinnamon
- Zest of 1 lemon
Instructions:
1. Melt the butter and roll out the puff pastry into thin sheets. Grease a muffin tin and line it with the pastry, leaving some overhang on the edges.
2. Prepare the filling: In a saucepan, heat the cream, milk, and sugar. In a separate bowl, mix the egg yolks and cornstarch, then slowly pour the hot mixture into the yolks while stirring continuously.
3. Add the vanilla sugar, cinnamon, and lemon zest to the filling. Pour the mixture back into the saucepan and heat over low until it thickens, without bringing it to a boil.
4. Pour the filling into the pastry-lined muffin tin.
5. Bake at 200-225°C (400-425°F) for about 20-25 minutes, or until the tops are beautifully golden brown.
6. Allow to cool slightly before serving. Enjoy warm or at room temperature.
