A refreshing and delicious salad combining the sweetness of orange with the earthiness of beetroot. Preparation Time: 30 minutes

Ingredients:
- 2 medium beetroots
- 1 orange (juice and zest)
- 1 tablespoon honey
- 1 tablespoon fresh sage (chopped)
- 1/2 cup olive oil
- Salt and pepper to taste
Instructions:
1. Boil the beetroots until tender, about 20-30 minutes. Allow to cool and then peel.
2. Cut the beetroots into small cubes or slices.
3. Squeeze the juice from the orange and zest the peel.
4. In a bowl, mix the orange juice, zest, honey, chopped sage, and olive oil. Season with salt and pepper.
5. Add the beetroot cubes to the dressing and mix well.
6. Let the salad sit in the refrigerator for about 15 minutes before serving to allow the flavors to meld.
