A delicious and healthy twist on classic nachos, made with roasted cauliflower and topped with black beans, corn, and vegan cheese. Perfect for a snack or a light meal.

Ingredients:
- 1 medium cauliflower
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon paprika powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1 cup black beans, rinsed
- 1 cup corn
- 1 cup shredded vegan cheese
- Fresh cilantro for garnish
- Avocado for serving
- Lime, juiced
Instructions:
1. Preheat the oven to 200°C (400°F).
2. Chop the cauliflower into small florets and place them in a bowl.
3. Add olive oil, salt, paprika, chili powder, and garlic powder to the cauliflower. Mix well until the spices are evenly coated.
4. Spread the seasoned cauliflower on a baking sheet lined with parchment paper and roast in the oven for about 20-25 minutes, until golden brown and crispy.
5. Remove the cauliflower from the oven and top with black beans, corn, and shredded vegan cheese.
6. Continue baking for another 5-10 minutes, until the cheese is melted.
7. Serve the nachos garnished with fresh cilantro, sliced avocado, and a drizzle of lime juice.
