A rich chocolate cheesecake that combines the best of chocolate and cheesecake. It's the perfect treat for celebrating Father's Day or any sweet occasion. Preparation Time: 30 minutes + 4-6 hours in the fridge
Serving Size: 10-12 slices
Ingredients:
- 200 g digestive biscuits
- 100 g butter
- 400 g cream cheese
- 250 g mascarpone cheese
- 200 g dark chocolate
- 150 g sugar
- 2 eggs
- 1 tsp vanilla sugar
Instructions:
1. Crush the digestive biscuits and mix them with the melted butter. Press the mixture firmly into the bottom of a springform pan.
2. Melt the dark chocolate using a double boiler or microwave.
3. In a bowl, beat the cream cheese, mascarpone, and sugar until smooth. Add the melted chocolate and mix well.
4. Add the eggs one at a time, mixing thoroughly after each addition.
5. Stir in the vanilla sugar and mix again.
6. Pour the chocolate filling over the biscuit base and smooth the surface.
7. Allow the cake to set in the fridge for at least 4-6 hours, preferably overnight.
8. Before serving, decorate with chocolate shavings or berries if desired.
