A delicious Easter tart that combines a crumbly base, soft peach filling, and a hint of coconut. A perfect sweet addition to your Easter table!

Serving Size: 8-10 servings

Ingredients:

- 200 g butter
- 1 dl sugar
- 2 dl all-purpose flour
- 1 dl potato flour
- 1 tsp baking powder
- 1 egg
- 500 g quark (or ricotta)
- 2 dl sugar
- 1 tsp vanilla sugar
- 2 eggs
- 1 dl coconut flakes
- 1 can peach halves (approx. 400 g)

Instructions:

1. Prepare the tart base: Whisk together the butter and sugar until fluffy. Add the egg and mix well. In a separate bowl, combine the all-purpose flour, potato flour, and baking powder. Gradually add this dry mixture to the butter mixture and stir until smooth.
2. Press the dough into the bottom and sides of a tart pan. Pre-bake the crust at 180°C (350°F) for about 10 minutes.
3. Prepare the filling: In a bowl, mix together the quark, sugar, vanilla sugar, and eggs until well combined. Fold in the coconut flakes gently.
4. Pour the quark filling onto the pre-baked crust. Arrange the peach halves on top of the filling.
5. Bake the tart in the oven at 180°C (350°F) for about 30-40 minutes, or until the filling is set and the top is golden brown.
6. Allow the tart to cool before serving. Enjoy as a delightful dessert!
