Delicious chocolate cupcakes topped with pink cream cheese frosting and Pätkis pieces. Perfect for satisfying your sweet cravings. Preparation Time: 45 minutes
Serving Size: 12 cupcakes
Ingredients:
- 100 g butter- 2 dl sugar
- 2 eggs
- 1 dl milk
- 2 dl all-purpose flour
- 1 dl cocoa powder
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 100 g Pätkis pieces (for the batter)
Frosting:
- 200 g cream cheese- 100 g butter
- 3 dl powdered sugar
- 1 tsp vanilla sugar
- Pink food coloring (optional)
- Pätkis pieces for decoration
Instructions:
1. Preheat the oven to 175°C (350°F). Line a cupcake tray with paper liners.2. Melt the butter and let it cool slightly. Add the sugar and mix well.
3. Add the eggs one at a time, mixing well after each addition. Then add the milk and mix.
4. In a separate bowl, combine the dry ingredients (flour, cocoa powder, baking powder, and vanilla sugar) and then add them to the batter. Mix until smooth.
5. Gently fold in the Pätkis pieces into the batter.
6. Divide the batter into the cupcake liners and bake in the oven for about 20-25 minutes, or until the cupcakes are cooked through. Allow them to cool.
7. To prepare the frosting: Beat the softened butter and cream cheese together. Add the powdered sugar and vanilla sugar, and beat until fluffy. If desired, add pink food coloring.
8. Spread the frosting over the cooled cupcakes and decorate with Pätkis pieces.
