A creamy and savory risotto featuring tender chantarelle mushrooms, perfect for a comforting meal. Preparation Time: 40 minutes
Serving Size: 4 servings
Ingredients:
- 300 g chantarelle mushrooms
- 1 onion
- 2 garlic cloves
- 300 g risotto rice
- 1 dl dry white wine
- 1 l chicken broth
- 100 g Parmesan cheese
- 50 g butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Clean the chantarelle mushrooms and chop them if necessary.
3. Heat the butter in a large skillet. Add the onion and garlic, sautéing until they are soft.
4. Add the chantarelle mushrooms and cook for a few minutes until they are tender.
5. Stir in the risotto rice, allowing it to absorb the flavors.
6. Pour in the white wine and let it simmer until the liquid has mostly evaporated.
7. Gradually add the chicken broth, stirring continuously until the rice is al dente and creamy.
8. Remove the skillet from heat and stir in the grated Parmesan cheese. Season with salt and pepper.
9. Let the risotto rest for a few moments before serving. Garnish with fresh parsley and enjoy!
