Parmesan Polenta with Chanterelles

*Delicious creamy polenta topped with sautéed chanterelle mushrooms. Perfect as a comforting main dish or side. Serves 4. Preparation time: 30 minutes.*
Ingredients:
- 200 g polenta
- 1 l water
- 50 g grated Parmesan cheese
- 200 g fresh chanterelle mushrooms
- 2 tbsp olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Bring the water to a boil in a pot and add salt.
2. Gradually add the polenta to the boiling water while stirring to prevent lumps.
3. Cook the polenta over low heat for about 20 minutes, stirring occasionally until thickened.
4. Stir in the grated Parmesan cheese until well combined. Remove from heat and keep warm.
5. Heat the olive oil in a pan over medium heat. Add the minced garlic and sauté briefly.
6. Add the chanterelles to the pan and sauté until they are beautifully golden brown. Season with salt and pepper.
7. Serve the Parmesan polenta on a plate, top with the sautéed chanterelles, and garnish with fresh parsley.
