Delicious Vegan Tofu Limonello Pasta

Ingredients:
- 250 g pasta (e.g., spaghetti or penne)
- 200 g tofu
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- Juice and zest of 1 lemon
- 100 ml vegetable broth
- 100 g fresh basil leaves
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain, reserving a little cooking water.
2. Cube the tofu and sauté it in olive oil in a pan until golden brown.
3. Add the minced garlic to the pan and sauté for another minute.
4. Pour in the lemon juice and zest, along with the vegetable broth. Let it simmer for a moment.
5. Toss the cooked pasta into the pan and add reserved cooking water as needed to prevent it from drying out.
6. Stir in the fresh basil, salt, and pepper. Mix well.
7. Serve warm, garnished with fresh basil leaves.
